I’m not a food blogger, nor do I have any aspiration to be so, but it’s fun passing on links for nummy and healthy recipes to you.  This is a sweet and sour dish we had for supper last night. So simple and quick! Of course, I tweaked it a bit.  Instead of regular jam, I used Simply Fruit fruit spread. It’s not sugar/calorie-free, but is a healthier version with half the sweetning of regular preserves and no high fructose corn syrup. And to the green peppers, onions and pineapple, I added red and yellow sweet peppers, carrots, and broccoli to make it a full blown stir fry. (Using Farmer’s Market produce, of course!) To compensate for the extra veggies, I then doubled the sauce. Mmmm! Yum!  Fits the bill for that Chinese craving without leaving home. Serve over rice (or cauliflower ‘rice’ to lower the carbs) and enjoy!
